When handling ready to roll icing the first thing to tackle is what to call it. In the US it’s referred to as fondant and in the UK as sugarpaste, but essentially ready to roll is exactly the same pliable cake covering, which can also be molded into decorative shapes.
Our Dr. Oetker Ready to Roll Soft Fondant Icing is ideal for using to cover fruit cakes at Christmas, or birthday cakes all year round – providing a smooth, sheet covering which can then be decorated with piping icing or writing pens.
rolled fondant
No, fondant does not need to be refrigerated. In fact, it should avoid any contact with your refrigerator. Leftover fondant should be stored in an airtight container at room temperature. If you plan on covering a cake with fondant, make sure you don’t use any fillings that need to be refrigerated.
To store the leftover icing first wrap it very tightly in a double layer of clingfilm (plastic wrap) then put it in a resealable plastic food bag and squeeze all of the air out of the bag.
Technically, yes, rolled fondant icing does expire and at some point it will go bad. Most fondants have a shelf life of 22 – 24 months. I will always prefer to use my fondant as freshly as possible, within the first 6 months of purchasing.
For basic modelling it’s great to use Ready to Roll Icing as it’s easy to shape, but if you want something that will set slightly firmer then you can try mixing one part Ready to Roll Icing to one part Flower and Modelling Paste. You can create some great cake toppers by doing this.

Store-bought frosting can last in the fridge for three to four weeks and in the freezer for two to three months. Homemade frosting will last up to a week in the fridge and about one month in the freezer. As always, watch for signs of spoiling, like a darker color, thicker texture or bad smell.
Always refrigerate any cake with a frosting that contains eggs or egg whites, or one that has whipped-cream frosting or any type of filling — be it whipped cream, custard, fruit or mousse. You won’t hurt a cake by refrigerating it, but the cold does dry it out.
If you know you will be using it soon, you can place it in the refrigerator for up to 2 weeks. If you aren’t planning on using it for a while, place that airtight container in the freezer for up to 6 months.
Traditionally made from egg whites and powdered (confectioners’) sugar, it is an easy icing to prepare but should NOT be made with raw egg whites. It is a well-known fact that eggs may contain a bacteria, Salmonella Enteritidis (SE), that can cause foodborne illness.
